10 minute- Protein Packed- Eggroll in a Bowl

Ok so you’ve seen this before but mine has something added to make it extra special and loaded with protein: the incredible edible EGG!

Makes 4 servings

Per Serving:

Cals: 281, Fat: 15.8g, Carbs: 6g, Protein:25.5g


1 onion, diced

4 cloves garlic, minced (2 cubes @trader joes frozen garlic)

1 tbsp ginger, minced (1 cube @traderjoes frozen ginger)

2 tsp sesame oil

1 lb ground beef

1 bag coleslaw mix

1 cup matchstick carrots

¼ cup coconut aminos (Can use soy sauce)

2 eggs, scrambled

topping: green onions, sesame seeds


1. Heat Skillet over medium high heat with olive oil. Saute onion until translucent. Add garlic until fragrant.

2. Add beef and break up with spoon until browned.

3. Add coleslaw and carrots. Stir until starting to become tender. Then add sesame oil, ginger, and coconut aminos.

4. Scramble the eggs in separate bowl.

5. Once beef and veggies are well incorporated, make a well in the center of the pan. Spray with olive oil spray and pour a scrambled egg in the center. Let cook. Then mix with beef.

6. Put into bowls and top with green onion, sesame seeds, and sriracha!!
