BLUEBERRY POWER MUFFINS with CATALINA CRUMBLE
I made half a serving (6 muffins) but recipe below will make 12 muffins

INGREDIENTS:
2 cups Kodiak Protein pancake mix
2 super ripe bananas
1 large egg
1 tbsp maple syrup
1 tsp vanilla extract
1/2 cup cottage cheese
½ tsp cinnamon
½ cup milk (I used whole) (more or less depending on consistency)
Blueberries (frozen or fresh is fine)
1 cup cinnamon Catalina crunch
2 tbsp butter, melted
DIRECTIONS:
1. Preheat oven to 350 degrees. In a blender, mix all ingredients except blueberries until smooth. Try not to over blend.
2. In a zip lock bag, crush Catalina crunch with a mallet until you get a crumble consistency. Add butter to zip lock and mix on outside with hands to incorporate.
2. Fill a well-greased muffin tin) ¾ the way full. Top with blueberries and push them down slightly. Top with crumble evenly over the muffins.
3. Bake for 16-22 minutes or until a toothpick can be inserted clean.
