Caesar Chicken Salad

CAESAR CHICKEN SALAD
Makes about 3 servings
(each serving approx. 1.25-1.5 cups):

INGREDIENTS:
2 cups shredded chicken (I prefer a rotisserie for ease, skin and fat removed)
1 cup romaine lettuce, finely diced
½ cup celery, finely diced
¼ cup pepperoncini, finely diced
1 lemon, juiced
2 green onions, diced (or ½ small shallot)
1/2 cup parmesan cheese, divided
½ cup greek yogurt
2-3 tbsp Caeser dressing (I used @sidedish and recommend a “clean version” – mine has 90 cals per 2 tbsp)
1 tsp garlic powder
Salt and LOTS of pepper
1 tsp red wine vinegar
DIRECTIONS:
1. In a large bowl, combine all the ingredients. Use a fork to mash and blend until you reached your desired texture.
