I created this soup because I wanted a healthier version of the dreamy and decadent Chicken N Dumplins and boy, does this DELIVER. I grabbed most of my ingredients from @traderjoes which makes this soup super easy to make. Oh and my kids loved this too!
Makes approx. 6 servings at about 1-1.5 cup per serving:
Calories: 236, Protein: 15.4g, Carbs: 20.4g, Fat: 13.3g, Fiber: 2.7g
Ingredients:
2 tbsp of olive oil
2 tbsp of butter
1 Trader Joes jar of diced Mirepoix (Carrots, celery, onion) ( or Dice your own about 2 cups total)
1 tsp thyme
2 tsp rosemary
Salt and pepper to taste
3 garlic cloves minced
2 tbsp All purpose flour
¼ cup milk (can use any milk alternative)
1 32 ounce jar of low sodium chicken stock
2 cups shredded chicken (I used rotisserie for ease)
1 bag @traderjoes cauliflower gnocchi
½ lemon
Parsley for topping
Directions:
1. Sauté mirepoix with olive oil until tender. Add herbs and spices.
2. Add garlic and butter and sauté until fragrant and butter has melted.
3. Sprinkle flour over veggies and mix into well combined.
4. Add milk, stir. Add Chicken broth.
5. Bring to a boil then let simmer.
6. While simmering add chicken. Reduce for 20 minutes.
7. Add cauli gnocchi and lemon juice and cook until gnocchi is cooked through. Season with more S&P as needed. Top with parsley.
