This side dish comes together so easily and is such an under rated crowd favorite. I would even say ditch the heavy mashed potatoes at thanksgiving and give this dish a try- (is that too controversial?!) it’s just really dang good. It also pairs well with steak 😊
INGREDIENTS:
1 bag petite red potatoes
Salt and Pepper
Olive oil
2 tbsp butter, melted
Fresh Rosemary (I only had dried so this works well too)
Garlic powder
Grated parmesan (optional)
Fresh parsley, chopped (optional)
DIRECTIONS:
1. Preheat oven to 425.
2. Place potatoes in a large pot and cover with water and add some salt. Bring water to a boil and let cook for 10-15 min or until you can pierce the potato with a knife.
3. Drain and let potatoes cool. Place potatoes on a napkin and pat dry.
4. Put parchment paper on a large sheet pan. Brush with olive oil.
5. Add potatoes and start to smash them with a fork to ½ inch thickness. The thinner/the crispier.
6. Brush the melted butter over the potatoes. Season with salt, pepper, garlic powder, and rosemary, and parmesan (if using).
7. Drizzle a little more olive oil over potatoes, as needed.
8. Bake in oven for 30 minutes or until the potatoes are CRISPY!!
9. Top with fresh parsley!
