Dill Pickle Chicken Salad



 

DILL PICKLE CHICKEN SALAD


Per Serving (1 of 4): about 1 cup (I like to have about 1.5 servings per meal)

*double the portion to get you through the whole week!

INGREDIENTS:


2 cups shredded chicken (I use rotisserie no skin)

½ cup Greek yogurt or low-fat cottage cheese

2 tbsp Dijon mustard

½ cup Grillo dill pickles (any dill pickle will work but the GRILLO brand is so good), petite diced

2 green onions, petite diced

3 tbsp pickle juice (more or less depending on your preferred consistency!)

1-2 tbsp chopped fresh dill

Salt and Pepper

1 tsp celery seed

 

DIRECTIONS:

1. Combine all ingredients with  fork. Pressing the chicken against the sides of the bowl until well combined. Taste. Add more pickle juice and seasoning as needed.
