This is my go to easy soup when I’m wanting to be healthy, get an immune boost, but still get full. I have been making this one for years and it’s nothin fancy but oh so good.
Easy Sausage, Spinach and White Bean Soup
Ingredients:
3/4 lb chicken or Turkey Sausage
1/2 onion diced
3 large carrots chopped
3 celery stalks chopped
3 cloves garlic minced
14 oz white beans, drained and rinsed
32 oz low sodium chicken broth
1/2 tbsp rosemary, chopped (fresh or dried)
1/2 Tbsp thyme, chopped (fresh or dried)
1 bay leaf
3 cups spinach, chopped
Salt and pepper
1/2 lemon, juiced
Grated Parmesan for topping
Directions:
1. Heat some olive oil over medium high heat. Add the sausage and cook for 5-7 minutes until browned.
2. Add the onion, carrots, celery, and garlic. Cook for 4-6 minutes until onion begins to becomes translucent.
3. Add the white beans, chicken broth, herbs and bay leaf. Season with salt and pepper. Bring to a boil and simmer covered for 20 minutes.
4. Add the spinach and lemon juice and stir until wilted. Remove bay leaf. Taste and season with salt and pepper as needed. Top with grated Parmesan!
