Easy Slow Cooker Pork Carnitas

This dish is so easy, makes so much meat, and will be a staple in your house. We made tacos, quesadillas, nachos, and added it to our eggs in the mornings. It really feeds the whole family.


Makes about 6 cups or 12 servings


Suggested Serving Size: 4 oz (about ½ cup)


  • Calories: ~200 kcal

  • Protein: ~42g

  • Fat: ~4g

  • Carbs: ~5g

  • Fiber: ~0.5g


Ingredients:


3-4 lb pork tenderloin (fat trimmed - costco usually has good cuts)

salt and pepper

2 tsp cumin

2 tsp chili powder

1 tsp oregano

1/2 tsp cayenne *more or less for heat preference

1/2 tsp cinnamon

1 beer (lager works well)

2 oranges, juiced

2 limes, juiced

1 onion, roughly chopped

6-8 cloves garlic, mashed

2 bay leaves

1 tbsp hot sauce (optional)



Directions:


  1. Rinse pork and pat dry. Rub meat with all the seasonings well, massaging into meat.

  2. Place meat in slow cooker on low.

  3. Add beer, orange, limes, onion, garlic, bay leaves and hot sauce.

  4. Cook on low for 2 hours per lb of meat** - it should be tender enough to shred easily with a fork. If not, it hasn't cooked long enough.

  5. To crisp, take shredded pork and put on a sheet pan lined with aluminum foil. Add a couple tablespoons of sauce to pork.

  6. Broil meat on high for 4-5 min or until crispy.

  7. Serve on tacos, quesadillas, nachos, etc.
