Elote Chicken Salad



ELOTE CHICKEN SALAD

There is something about summer and corn. Especially the elote corn flavor. I combined elote and chicken salad to make a healthy quick lunch. Just prep it on Sunday and you have a high protein, lower carb option ready for the entire week.


Makes 4-5 servings:


Per serving (1-1.5 cups):

  • Calories: 283 kcal

  • Protein: 25.6 g

  • Carbs: 10.8 g

  • Fat: 15.8 g n --> to lower fats, replace mayo with additional greek yogurt

  • Fiber: 1.5 g


When 1 serving is added to egg wrap with cheese and toppings:

  • Calories: 409 kcal

  • Protein: 38.4 g

  • Carbs: 16.3 g

  • Fat: 18.5 g

  • Fiber: 2.5 g

 

INGREDIENTS:

 

Olive oil spray or olive oil for cooking

½ red onion, diced

1 jalapeno, diced (seed and core removed)

1 cup frozen roasted corn (can use non roasted if you don’t find roasted)

 

½ cup nonfat Greek yogurt

1/4 cup mayonnaise

Juice of ½ lime

Zest of ½ lime

2 scallions, chopped

2 tbsp of “everything but the elote seasoning” from Trader Joes (if no TJS then use: chili powder, smoked paprika, cumin, garlic and onion powder- measure with your heart)

Salt and Pepper

2.5 cups shredded chicken (I pulled from a rotisserie)

Cilantro, chopped

¼ cup cotija cheese

 

FOR WRAP:

 

1 egg wrap

¼ cup lite shredded cheddar or mexican cheese

½ cup chopped tomatoes

Arugula

Cholula hot sauce (or hot sauce of choice)

 

 

DIRECTIONS:

 

1.       Heat olive oil in skillet over medium heat. Sauté red onion and jalapeno until tender. Add frozen corn and stir until cooked through. Remove from heat.

2.       In a large bowl, combine Greek yogurt, mayonnaise, lime juice, lime zest, scallions, elote seasoning and salt and pepper. Add in the corn mixture and chicken. Stir well to combine.

3.       Top with chopped cilantro and cotija cheese.

4.       Meanwhile heat a clean nonstick skillet with olive oil or spray well. Sprinkle cheese in a circle the size of your egg wrap. Place egg wrap on top and press down with spatula. Cook until cheese is browned and easily lifts from pan.

5.       Flip wrap and turn heat off. Put chicken salad, tomatoes, arugula, more elote seasoning, hot sauce and whatever your heart desires on the wrap. Fold and enjoy!!
