Healthy Jalapeno Popper Chicken Salad

Woah, this may be my new favorite chicken salad recipe. This healthy jalapeno popper chicken salad is BOMB. It’s the healthier version of the decadent jalapeno poppers with all the same flavors.


Approx 8 servings:


Per serving:

Cal: 167, Fat: 10.1g, Carb: 1.3g, Protein: 21.9g

 

INGREDIENTS:


1 lb shredded chicken breast, cooked (I used rotisserie)

6 slices of bacon

3 jalapenos

¼ cup mayonnaise of choice

¼-1/2 cup cottage cheese (I used @goodculture)

¼ cup pickled red onions, chopped (you can also use green onions or onions of choice but pickled red onions are just next level in my opinion)

2 tbsp hot sauce (or more depending on heat preference)

1 tsp garlic powder

Salt and pepper

½ lime, juiced

 

DIRECTIONS:


1.       Bake bacon in oven at 375 until crispy (I like my bacon extra crispy here so it has texture in the chicken salad).

2.       Chop chicken breast into small chunks (the smaller the better in my opinion).

3.       Once bacon is done cooking, turn Broiler on HIGH. Broil the jalapenos, rotating every couple minutes, until they are tender and lightly charred. While jalapenos are cooking, chop bacon.

4.       Remove jalapenos and let cool. Once cool, slice open and remove core and seeds. Roughly chop.

5.       In a large bowl, combine chicken, chopped bacon, chopped jalapenos, mayo, cottage cheese, red onions, hot sauce, and spices. Mix until well incorporated.

6.       Enjoy on crackers, @egglife wraps, or by itself!
