Healthy Protein Autumn Chicken Salad

Makes Approx 4 servings ( 1 cup per serving):

INGREDIENTS:


2 cups cooked chicken breast (I used rotisserie)

1 granny smith apple, diced

½ cup dried cranberries

½ cup celery, diced

½ cup pecan pieces, roasted and chopped

½ cup low fat cottage cheese

1/3 cup Greek yogurt, 2 %

1 tbsp mayonnaise

1 tbsp Dijon mustard

Salt and Pepper to taste

½ tsp garlic powder

½ tsp celery seed



DIRECTIONS:


1. In a large bowl, combine all ingredients and mix until well combined. If you do not have roasted pecans, preheat oven to 350 and roast raw pecans for 5-10 min making sure they do not burn.


2. Taste and season accordingly.
