Mediterranean Sheet Pan Salmon






This Mediterranean sheet pan salmon  is one of those dishes that looks super impressive but is  SO EASY – all you have to use is ONE pan and throw together a bunch of veggies, make a super healthy and easy marinade with lemon, oregano, Dijon, and olive oil, throw some Mediterranean veggie toppers as I like to call them , finish by baking the salmon on the same pan as the veggies and you are left with a meal that looks so sophisticated. Also my kids actually like salmon so this dish is a big win for me.



INGREDIENTS:


FOR THE SHEET PAN:

Olive oil

Salt and pepper

Paprika

Garlic powder

2 salmon fillets

1 cup small potatoes, sliced in half (you can skip this if going low-carb)

1-2 cups cauliflower florets

½ zucchini, quartered

½ red onion, sliced

½ cup kalamata olives, pitted

½ cup cherry tomatoes, halved

½ cup canned artichokes ( I prefer the ones in water only)

Feta, crumbled (amount up to you – can also leave off if dairy free)

Fresh parsley and dill, chopped (for topping)

 

FOR THE MARINADE:

2 tbsp Dijon mustard

4 tbsp olive oil

1 tbsp fresh oregano, chopped

1 lemon, juice half and slice the other half (leave some juice for very end)

 

DIRECTIONS:


1.       Preheat oven to 400 degrees. Line a large sheet pan with parchment paper.

2.       Throw potatoes, cauliflower, zucchini, and red onion on sheet pan. Toss with olive oil, paprika, and garlic powder. Bake for 10-15 minutes until tender.

3.       While potatoes are cooking, make salmon marinade. Combine olive oil, chopped oregano, Dijon mustard, salt and pepper and lemon juice. Stir well. Brush over salmon and let sit to the side. Leave a little marinade to spread of veggies.

4.       Take out sheet pan and add olives, tomatoes, and artichokes. Spread remainder of marinade on veggies. Toss to combine and put back in oven.

5.       Bake another 10-15 minutes until everything is nice and tender.

6.       Make a space in the middle of the sheet pan for the salmon. Place the lemon slices down on parchment paper. Top with salmon. Crumble feta all over veggies.

7.       Place back in oven for 8-10 minutes. Salmon cooks quickly- keep a close eye.

8.       Remove sheet pan from oven once salmon is cooked. Sprinkle parsley, dill, and lemon juice all over salmon and veggies to finish.
