MINI DIY BANANA MUFFINS
Ingredients:
3-4 medium bananas overripe (the more ripe the better the flavor)
1 cup all-purpose flour
¾ cup light brown sugar packed
⅓ cup butter melted and cooled
1 large egg beaten
½ tablespoon pure vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
Toppings:
½ cup chocolate chips, optional
½ cup chopped walnuts, optional
Coconut sugar or brown sugar, optional
Directions:
1. Preheat oven to 375°F. Line a muffin pan with paper liners or spray silicone muffin tin . Makes 12 muffins or 24 mini muffins (what we did!)
2. In a large bowl, use a fork or masher to mash peeled bananas into a smooth puree. Add beaten egg, melted and cooled butter, and vanilla. Stir well.
3. In a separate bowl, whisk together flour, brown sugar, baking soda, and salt until combined.
4. Add dry ingredients to wet ingredients, mixing until just incorporated.
5. Fill cupcake tin about ¾ of the way up. Top with whatever toppings your kids want to put in- could also fold them in before! We sprinkled coconut sugar over the top for a crunch! Bake for 15-20 minutes or until a toothpick comes out clean!
