Organ Orzo: Halloween Pasta



I love Halloween and any excuse to make dinner super spooky, I am all game!! mwahhahaha


You could really buy these * silicone molds and do any spooky shape- maybe its just an excuse to get your kid excited about dinner. Anyway, I learned mozzarella trick from @xoxomame. I put my own spin on it and made this super easy Caprese Orzo and served grilled sausage on the side for a complete delicious meal.


Ingredients:


1 block fresh mozzarella, cut into the size of each mold

1 cup orzo pasta

2 tbsp of pesto, I used @mezzetta basil pesto

1cup cherry tomatoes, sliced

fresh basil, chopped

salt and pepper

1 tbsp butter

balsamic glaze


Directions:


  1. Preheat oven to 350 degrees. Cut your mozzarella into approximately the same size as the molds you are working with. Lightly press the mozzarella to form the shape of the mold. (You will need to press mozzarella to form into the more complicated shapes)

  2. Bake molds for approx. 8 minutes on a sheet pan. Water will be released.

  3. Remove from oven and blot with a paper napkin to press out any remaining water. Place molds in refrigerator for 10 min to cool.

  4. While cheese is baking. Start a pot of water and cook orzo according to package.

  5. Once orzo is cooked. Drain and add back to pot. On low heat, stir in pesto, butter, salt and pepper until blended. Turn off heat.

  6. Add sliced tomatoes and sliced basil. Plate into bowls.

  7. Top with balsamic glaze and your spooky mozzarella shapes.
