PB& J Chia Pudding



 

PB&J CHIA PUDDING:


Recipe makes 2 servings

Per Serving:

  • Calories: 296

  • Protein: 31g

  • Carbs: 18.8g

  • Fat: 11g

  • Fiber: 10.5g

 

 

INGREDIENTS:


1 cup almond milk (or milk of choice- coconut milk would be great too!)

2 tbsp PB2 (peanut butter powder)

1 tsp vanilla extract

1 tbsp berry jam (I used Chia Smash for a sugar free option)

4 tsp monkfruit sweetner (or 2 tbsp maple syrup)

4 tbsp chia seeds

2 scoops vanilla protein powder (I love Kion - code "mamma" at checkout)


Topped with:

1 tsp peanut butter

1 tsp jelly/jam (sugar free)

Fresh berries

 

DIRECTIONS:


1. In a blender, combine all the ingredients. Pulse a couple times until blended. Let settle for a couple minutes. Then pulse again.

2. Pour into Tupperware to store in fridge overnight to fully set.

3. When ready to serve, remove from fridge. Spoon into mason jar layering with peanut butter, chia pudding, and some fresh berries on top. (not in macros above)
