PROTEIN MINI MUFFINS
Per Muffin (1 of 24 muffins):
Calories: ~53 kcal
Carbs: ~7.9g
Fiber: ~0.9g
Protein: ~3.3g
Fat: ~0.8g
INGREDIENTS:
2 cups Kodiak Protein pancake mix
2 super ripe bananas
1 large egg
1 tbsp maple syrup
1 tsp vanilla extract
1/2 cup cottage cheese
½ tsp cinnamon
½ cup milk (I used whole) (more or less depending on consistency)
Mini chocolate chips or toppings of choice
DIRECTIONS:
1. Preheat oven to 350 degrees. In a blender, mix all ingredients except chocolate chips until smooth. Try not to overblend.
2. Fill a well-greased mini muffin tin (24 muffins) or a regular size muffin tin (12) ¾ the way full. I used my cookie scoop and it worked so well. Top with chocolate chips, blueberries, peanut butter chips or whatever your kids will eat!
3. Bake for 10-15 minutes or until a toothpick can be inserted clean. Do not do like I did and forget to set a timer and overcook them! They were still eaten by the kids but would have been MUCH better not overcooked!
