
REDEFINED BUFFALO CHICKEN DIP

Ingredients:
1 cup @good_culture cottage cheese 2%
1/2 cup 1/3 fat cream cheese
1/4 cup @primalkitchenfoods Buffalo sauce
1.5 cups shredded chicken (rotisserie)
1/4 cup shredded cheddar (and another 1/4 or less for topping)
1/8 cup blue cheese crumbles (another 1/8 cup for topping)
1 green onion chopped
Directions:
1. Preheat oven to 400 degrees.
2. Grease small dish or oven proof skillet. I used 6 inch cast iron.
3. Blend cottage cheese, cream cheese, blue cheese and Buffalo sauce in food processor until desired consistency. Combine cheese mixture, chicken, and shredded cheddar to bowl. Season with garlic powder, salt and pepper. Mix well.
4. Put into dish. Top with remaining blue cheese and shredded cheddar.
5. Bake for 15-20 min or until bubbly and a little golden on top.
6. Top with sliced green onions. Serve with carrots, celery, and chips of choice!...
