Redefined Buffalo Chicken Salad

Haha I forgot to take a picture of my buffalo chicken salad but this is me eating it and that should be proof enough it is so dang delicious!!


Makes approx. 4 servings (about 1 cup)


Per serving (mayo):

  • Calories: ~223 kcal

  • Protein: ~18g

  • Carbs: ~4.3g

  • Fat: ~14.5g

  • Fiber: ~0.9g


Per serving (lowfat cottage cheese or greek yogurt):

  • Calories: ~145 kcal

  • Protein: ~21g

  • Carbs: ~5.3g

  • Fat: ~4.3g

  • Fiber: ~0.9g


INGREDIENTS:

2 cups chicken breast, small diced (I use a rotisserie chicken without skin)

½ cup celery, diced

½ cup shredded carrots, diced

¼ cup green onion, diced

½ cup mayonnaise (swap cottage cheese if watching fats)

1/4  cup 2% greek yogurt ( or add more for desired consistency)

¼ cup primal kitchen buffalo sauce

1 tsp garlic powder

Salt and pepper


DIRECTIONS:

1.       In a large bowl, combine all ingredients. Taste and season as needed.

2.       Serve with more diced green onions and buffalo sauce on top!
