Redefined Buffalo Chicken Salad



Haha I forgot to take a picture of my buffalo chicken salad but this is me eating it and that should be proof enough it is so dang delicious!!


Makes approx. 4 small servings (double recipe if need)


Per serving:

Calories: 214, Fat: 25g, Carbs: 4g, Fiber: 1g, Net carbs: 3g, Protein: 11.2g


INGREDIENTS:

1.5 cups chicken breast, diced (I use a rotisserie chicken without skin)

½ cup celery, diced

½ cup shredded carrots, diced

¼ cup green onion, diced

½ cup mayonnaise (swap cottage cheese if watching fats)

½  cup 2% greek yogurt

¼ cup primal kitchen buffalo sauce

1 tsp garlic powder

Salt and pepper


DIRECTIONS:

1.       In a large bowl, combine all ingredients. Taste and season as needed.

2.       Serve with more diced green onions and buffalo sauce on top!
