Per serving (about 1 cup serving size): To make this recipe lower fat and higher carbs - serve over a bed of rice and switch to saltine crackers vs ritz (or lower fat ritz).

Ingredients:
½ cup Greek yogurt
½ cup cottage cheese, @goodculture is my jam duh
½ tbsp chicken better than bouillon
1/4 tsp onion powder
1/4 tsp garlic powder
½ tsp Italian seasoning
1.5 tsp poppyseeds
Salt and pepper (go light on salt as the better than bouillon has a lot)
1 cup broccoli florets (optional)
2 cups chicken, rotisserie for ease
¼ cup shredded cheddar cheese
Half sleeve whole wheat ritz crackers
2 tsp butter, melted
Directions:
1. Heat olive oil over medium heat in saute pan. Chop broccoli. Add broccoli to pan and saute until bright green. Pour a couple tablespoons of water into pan and cover with lid to let steam. Steam for 4-5 min or until slightly tender.
2. Preheat oven to 350 degrees. Spray 9 x 9 casserole dish with cooking spray.
3. Meanwhile, in a large mixing bowl combine Greek yogurt, cottage cheese, better than bouillon, spices, and poppyseeds. Mix until well combined.
4. Chop broccoli finely. Add chopped broccoli, chicken and cheese to yogurt mixture. Mix well and pour into casserole dish. Flatten on top.
5. Melt butter in microwave. Crush ritz crackers in a small bowl. Add melted butter to ritz crackers. Sprinkle evenly on top of casserole. Finish with more poppyseeds.
6. Bake casserole for 20-25 min or until crust is golden.
7. Serve over rice or alone!
