Redefined Hamburger Helper

Serving size: 6 servings


This recipe can be altered depending on LOW CARB or HIGH CARB days... See Notes at bottom to switch this to a high carb/low fat day.


Per serving:

Calories: 474, Protein: 30.2g, Carbs: 29g, Fat: 23g, Fiber: 4g NET CARBS: 25g


INGREDIENTS:


*2 tbsp Olive oil (sub olive oil spray for less fat)


½ large onion, diced


1 lb ground grass-fed beef ( I use @butcher_box - sub turkey, chicken for less fat)


1 tsp corn starch


1 tsp garlic powder


1 tsp paprika


1 tsp chili powder


Salt and pepper (I never tell you how much because I believe you should taste your dish throughout and add as needed)


1 cup beef broth


1 cup tomato sauce


1.5 cups milk (any milk (not flavored) will work here *sub low fat milk for less fat)


1 tbsp ketchup, low sugar (if you have)


1 tbsp Dijon mustard


1 (8 oz) box high protein pasta shells (@eatbanza )


1 cup shredded cheddar cheese (can use more or less *sub lite shredded cheddar for less fat)


Fresh parsley/red chili flakes (For topping)



DIRECTIONS:


1. Heat olive oil in large pot over medium high heat. Sauté onion until translucent. Add ground beef. Break up into pieces until browned through (I use this meat grinder tool).


2. Sprinkle cornstarch and spices all over meat and stir to combine.


3. Add broth, tomato sauce, and milk to pot. Stir. Add ketchup and mustard. Add pasta and bring to a boil. Let boil for 1 minute. Reduce heat to medium low and let simmer for approx. 10 minutes. BE SURE TO STIR every few minutes so it does not stick.


4. Remove lid and add in cheese. Let simmer and reduce until pasta is cooked through and sauce is to desired thickness- stirring occasionally.


5. Season with salt and pepper to taste and chili flakes if you want added heat.


6. Top with fresh parsley!!



** If you make all the lower fat subs your macros will be:
