PROTEIN SHEET PANCAKE STICKS (perfect for toddler dipping!)
Makes about 16 dipping sticks:

Calories: ~336 kcal, Carbs: ~34.4g, Fiber: ~7.6g, Protein: ~20g, Fat: ~13.2g
Ingredients:
2 cups Birch Benders Protein Pancake Mix (I used Kodiak this time- I think it has more of a protein type taste but my kids will still eat it)
2 eggs
1 cup cottage cheese, 2 %
1 cup whole milk, plus 1-2 tbsp to thin out
½ cup Lily’s peanut butter chips (can use chocolate chips, blueberries etc – will change macros)
DIRECTIONS:
1. Preheat oven to 375 degrees. Lay parchment paper on sheet pan. Combine everything in a blender. Blend until just combined. Don’t over blend or pancake will be tough.
2. Pour mixture onto sheet pan. Let each kid decide each section. I divided it into 4 sections and did 1 chocolate chips, 2 peanut butter chips, and 1 plain.
3. Feel free to add chocolate chips, blueberries, bananas, nuts etc! (add ingredients to macros!)
4. Bake in oven for 10-15 minutes or until a toothpick can be inserted clean.
5. Let cool and cut into 4ths. Then cut into stick shapes (about 4 sticks her quarter).
