Simple Spicy Honey Mustard Salmon

I probably make this salmon 1x per week. My kids love it (I use less sriracha for them!) and it is so easy to make. You don't always have to have a "recipe" for dinner. Simple whole foods will always win!
SIMPLE SALMON (SPICY HONEY MUSTARD) w/ lemon sriracha yogurt sauce

INGREDIENTS:
For Salmon:
2- 5 oz salmon fillets (Wild caught preferred)
2 tbsp Dijon mustard
1 tbsp honey
1/2 lemon, juiced
1 tsp sriracha
2 cloves garlic (or 2 frozen cubes)
Salt and pepper
For Yogurt Sauce:
½ cup low fat plain Greek yogurt
1 tbsp sriracha
½ lemon, juiced
Salt and pepper
DIRECTIONS:
1. Preheat oven to 400. Pat dry salmon. Put parchment paper on sheet pan.
2. In a small bowl, combine Dijon, honey, lemon juice, sriracha, garlic and salt/pepper. Taste and season accordingly.
3. Brush marinade on salmon, coating all sides. Let sit at room temp until oven is heated.
4. Cook in oven for 6-8 min or until internal temp reaches 120-125. Let rest.
5. While salmon is cooking, combine Greek yogurt, sriracha, lemon and salt/pepper in bowl. Taste.
6. Serve salmon with yogurt sauce. (I like to throw on veggies to roast while I am prepping salmon!)
