
High Protein Spinach Artichoke Chicken Pasta Bake

INGREDIENTS:
4 oz Banza or high protein pasta (I used a cavatelli pasta and I loved the thinness)
2 tbsp cream cheese
½ cup Greek yogurt, 2%
1 tbsp Italian seasoning
Salt and Pepper
Chili Flakes (optional)
2 cups shredded chicken
1 9oz jar of marinated artichoke hearts (in water)
2 cups fresh spinach
½ cup shredded mozzarella
¼ cup parmesan
DIRECTIONS:
1. Preheat oven to 375. Cook pasta according to package AL DENTE. It will finish cooking in oven.
2. While pasta cooks, combine remainder of ingredients (minus mozzarella and parmesan) in a large bowl.
3. When pasta is finished, drain, and pour into bowl. Mix well.
4. Pour pasta mixture in a 8x8 baking dish sprayed with avocado spray.
5. Top with mozzarella. Bake at 375 for 10-15 minutes. Broil for 2 min on HIGH if you like a little crust (optional). Remove and sprinkle parmesan on top.
6. Cut into 4 sections and store in fridge for meal prep or eat immediately.
