SPINACH/FETA TURKEY MEATBALLS
Makes approx. 20 meatballs
Per Meatball (approx.):
Calories: 75

INGREDIENTS:
1 lb ground turkey (lean)
2 cups spinach, finely chopped
½ cup red onion, petite diced
½ cup feta, crumbled
1/3 cup almond flour
1/3 cup flax seed meal
Salt and Pepper
Italian/Greek Seasoning
2 eggs
3 gloves garlic, finely chopped
DIRECTIONS:
1. Preheat oven to 400. In a large bowl, combine all ingredients. Use hands to fully combine making sure everything is blended.
2. Using a 2 inch cookie scoop or a spoon, scoop even balls and slightly roll between hands. Repeat until all batter is used. Makes approx. 18-20 meatballs.
3. Cook for approximately 15 minutes or until internal temp reaches 165.
4. Store in Tupperware.
