I hesitated even posting this because is it even a recipe? BUT, as a busy mom I genuinely appreciate the SHORTEST cuts to healthy quick dinners. This may just not be something you think about and then there is the fact that you cannot get both of these ingredients at the same store BUTTT if you plan ahead and stock up on Kevin's Naturals from Costco, and Trader Joe's Spicy Mexican Cauliflower Rice (go ahead and get the Stir Fry flavor while your at it!) you will have dinner ready in minutes.


Makes 2 small servings:

Per Serving


  • Calories: ~250-300 kcal

  • Protein: ~30g

  • Carbs: ~12-15g

  • Fat: ~10g

  • Fiber: ~4-5g


INGREDIENTS:


1 box of Kevin's Natural Cilantro Lime Chicken

2-3 cups Trader Joe's Spicy Mexican Cauliflower Rice


Toppings:

1/2 cup plain greek yogurt (the more the better to temp down the spice and up the protein)

Avocado slices

Green onions


DIRECTIONS:

  1. Heat Kevin's according to package. Right after you add the sauce, throw the cauliflower rice in same pan. Stir until well combined and cooked through.

  2. Put into bowls and top with toppings of choice.
