
BERRY COCONUT PROTEIN BALLS
Makes about 15 balls:

INGREDIENTS:
1 cup rolled oats
1/2 cup coconut flour
2 tbsp chia seeds
1/2 cup shredded reduced fat coconut (plus more for rolling outside)
2 scoops unflavored or vanilla protein powder
1/4 cup cashew butter or sunflower seed butter
1/4 cup maple syrup
1.5 cups frozen raspberries
DIRECTIONS:
1. In a food processor, add all ingredients until well combined. You may need to add some almond milk if it it too dry. Add a tbsp at a time until a sticky dough forms.
2. Use a cookie scoop or hands to roll out about 15 equal sized balls. Roll in coconut flakes to cover outside. Set on parchment paper. Put in fridge for 1 hour to set.
