Frozen Protein S'mores

Ingredients:


1 (5.9 ounce) box instant chocolate pudding

2.5 cups whole milk

1 tub of cool whip or coco whip (halfed between the layers)

2 scoops protein powder (vanilla or flavorless!)

12 graham crackers, broken in half

5 ounces whipped cream cheese

6 ounces marshmallow fluff (almost a whole jar)

Pinch of salt


Directions:


1.  Line a 9×13-inch baking dish with parchment paper, leaving extra parchment hanging over, so you can pop them out.


2.  In a bowl, whisk together the pudding mix, 1 scoop protein powder, milk, and 1/2 tub of the Cool Whip until smooth and creamy. It will be chunky at first. Keep stirring.


3.  Lay half of the graham crackers evenly in the bottom of the baking dish. Make sure you remember which direction you put them down because you want the top layer to match. Spread pudding mix into an even layer over the top and chill in freezer while you make the marshmallow layer.


4.  In another bowl, beat together the cream cheese, marshmallow creme until smooth. Mix in the remaining Cool Whip, remaining scoop of protein powder, and a pinch of salt. Stir well until no chunks remain.


5.  Spread marshmallow mixture evenly over the chocolate layer. Place remaining graham crackers over the top (in same direction as the bottom layer). Cover with foil. Freeze until firm. (about 4 hours)


6.  Lift s’mores out of dish by lifting parchment paper. Cut into 12 s’mores.


7.  Let soften at room temperature for 10 min before diving in (if you can wait). Wrap the rest in individual cling wrap and store in freezer.
