ITALIAN GRINDER CHICKEN SALAD:
Macros per serving (about 1 cup):
Calories: 224
Protein: 25.8g
Carbs: 3g
Fat: 11.9g (to reduce fats- remove salami and mayo! reduces to 7.1 grams of fat per serving)
Fiber: 0.2g
INGREDIENTS:
2 cups shredded chicken
1 oz salami, cut in chunks
2 oz turkey pepperoni, cut in chunks
2 thin slices provolone cheese, cut in chunks
¼ cup pepperoncini peppers, roughly chopped
¼ cup cherry tomatoes, halved
2 tbsp pickled red onions, roughly chopped
½ cup cottage cheese
1 tbsp mayo
2 tbsp Dijon mustard
1-2 tbsp pepperoncini pepper juice
1 tsp red wine vinegar
1/2 -1tsp oregano
1 tsp garlic powder
Salt and pepper
DIRECTIONS:
1. In a large bowl, combine all the ingredients above. Mash together with a fork until well-combined. Taste and season accordingly!
Serve on fresh sourdough, in endive lettuce cups, or with crackers!
