Redefined Meal Prep Breakfast Quesadillas

REDEFINED BREAKFAST QUESADILLAS
Per Quesadilla:

INGREDIENTS:
4 tortillas of choice (I used Rise and Puff Brand found at sprouts or whole foods – other options I love Siete Brand tortillas, Egg Life Egg wraps) (you can meal prep as many as you want this recipe is for 4-5 quesadillas)
1 cup shredded Mexican cheese (I used Lite shredded cheese!)
4 eggs (or 1 per serving)
8 egg whites (or 2 per serving)
8 Amylu chicken sausage links (or 2 links per serving)
Onions, spinach (veggies of choice)
1 cup cottage cheese
DIRECTIONS:
1) Preheat oven to 400. Line sheet pan with parchment paper. Lay out tortillas.
2) While oven is preheating. Sauté veggies and sausage. Scramble eggs, egg whites, and cottage cheese together. Pour into skillet with veggies. Cook until slightly under cooked (will cook later in oven!).
3) Sprinkle approx. 1/8 cup cheese on bottom of tortilla. Evenly distribute the egg mixture. Top with remainder of cheese. Fold tortilla in half and brush olive oil on tops. Use another sheet pan to press down on quesadilla. IMPORTANT STEP!
4) Put quesadillas with sheet pan on top in oven. Bake for 15-20 minutes or until tops are slightly golden.
5) Remove, let cool, and store in Tupperware. When ready to serve, reheat in air fryer at 400 for 8 minutes or microwave for 1 min!
