Spinach Artichoke Chicken Salad


ARTICHOKE SPINACH CHICKEN SALAD

 

Per serving (1 of 4 servings)- about 1-1.5 cups)

INGREDIENTS:


2 cups chicken breast, finely chopped

2 tbsp mayonnaise (I prefer an avocado oil base)

¾ cup chopped artichokes

2 cups chopped spinach (finely chopped)

¼ cup feta

¾-1 cup low fat cottage cheese (start with less and add until you like the consistency!)

1 tsp apple cider vinegar

Salt and pepper

Chili flakes (optional)

 

DIRECTIONS:


1. In a large bowl, combine all the ingredients. Blend together with a fork pressing the chicken until it combines with the mixture. Add more cottage cheese if you like a less dry consistency.


*If you do not like the texture of cottage cheese, this can easily be swapped for plain Greek yogurt
