Ingredients:
1 cup Birch Benders Protein Pancake Mix
1 egg
½ cup cottage cheese, 2 %
½ cup whole milk, plus 1-2 tbsp to thin out
¼-1/2 cup mini chocolate chips (lilys is preferred)
Directions:
1. Combine everything but chocolate chipsin a bowl. If your child is super picky, then first throw the egg, cottage cheese, and whole milk in a blender to get a smooth texture. Combine the blended cottage cheese into pancake mix and mix until incorporated. Add a tbsp of milk at a time until desired consistency is reached.
2. Heat skillet over medium high heat. Add a small amount of butter or spray to skillet. Pour batter to form pancake. Add chocolate chips. Once bubbles have popped, flip pancake. Repeat approximately 8 times.
