High Protein Pimento Cheese




I am a pimento cheese LOVER. The Palmetto's spicy pimento cheese is my favorite and I could seriously eat the entire tub. I REDEFINED it with my favorite high protein cottage cheese, I promise the texture is so perfect. Make sure to get Good Culture 2% for the best high protein pimento cheese texture.


Makes approximately 4 servings (about 1/4 cup serving)


Per serving:

Calories: 90, Fat: 6g, Carbs: 1.3g, Protein 8g


INGREDIENTS:


3/4 cup (150g) of 2% cottage cheese (prefer Good Culture brand)

1/4 cup LITE shredded cheddar (Trader Joe's has a great option)

1/4 cup Sharp shredded cheddar

2 tbsp pimentos, chopped

1/4 jalapeno, diced


DIRECTIONS:


  1. Combine all ingredients in a small bowl until well mixed.

  2. Serve with crackers, celery, carrots, put on sammies, really whatever you want!!
