Italian Sheet Pan Meatballs
Makes approx. 30 (1-2 inch diameter meatballs)
Per meatball:
Calories: 47, Fat: 3.6g, Carbs: 1.1g, Protein: 4.7g
Ingredients:
1 lb grass-fed beef (can substitute chicken, turkey, Italian sausage etc but will change macros!)
2 eggs
1 tbsp fresh parsley, chopped
1 tbsp fresh basil, chopped
4 garlic cloves, minced (or frozen cubes)
½ red onion, grated
Salt and pepper
½ cup parmesan, grated (or shredded)
1/3 cup Italian breadcrumbs
Directions:
1. Preheat oven to 375. Line a sheet pan with parchment paper.
2. In a large bowl, combine all ingredients. Mix with hands to get well combined (can wear gloves if that freaks you out!)
3. Shape into 1-2inch balls and place on sheetpan. The smaller, the more servings.
4. Bake for 12-18 min or until internal temp reaches 160 degrees. You don’t want to overcook!
Serve with Rao's marinara, in a wrap, alone, or however you please!
