Redefined Classic Chicken Salad




This REDEFINED CLASSIC CHICKEN SALAD is the perfect meal prep option for Sunday. If you want to lower your fats, then sub more greek yogurt for the mayo. If you make this recipe, be sure to tag me @redefinedmamma on instagram!



Makes approx. 6 servings (about ½ cup per serving)


Per serving:

Calories: 241, Fat: 16.8g, Carbs: 5.7g, Protein: 16.8g



Ingredients:


2  cups cooked chicken, chopped or shredded

2 stalks celery, diced

½ cup shredded carrots, diced

1 cup green or red grapes, thinly sliced

1/2 cup thinly sliced almonds

2 green onions, sliced thin

1/4 cup plain Greek yogurt

¼ cup mayonnaise

1 Tbsp Dijon mustard

½ lemon, juiced 

1/2 tsp celery seed

Salt and pepper (to taste)


Directions:


1.       In a large bowl, combine all ingredients and blend with a fork until well mixed.

2.       Taste and add more seasoning as needed.
