Pimento Cheese Chicken Salad


This redefined chicken salad combines my two favorites: pimento cheese and chicken salad but in a much healthier twist. For less fat, you could always use some lighter cheese (but don't skip the mayo!)


Makes approx. 6 servings (about ½ cup per serving)


Per serving:

Calories: 178, Fat: 10g, Carbs: 2.9g, Fiber: 1g, Protein: 17.5g


Ingredients:


2  cups cooked chicken, chopped or shredded

2 stalks celery, diced

1 cup shredded cheddar cheese, sharp

1/3 cup plain Greek yogurt

2-3  Tbsp mayonnaise

¼ cup diced pimentos, drained

½ lemon, juiced 

Hot sauce (to taste)

Salt and pepper (to taste)


Directions:


1.       In a large bowl, combine all ingredients and blend with a fork until well mixed.

2.       Taste and add more seasoning and hot sauce as needed.
