Ok ya’ll our family loves fried rice. It is always one of those end of the week “whatever is left in the fridge” recipes that honestly has so many variations. We love ours with steak but feel free to swap out the protein and change around the veggies. Honestly, anything goes with this bomb recipe.
RICE:
1 tbsp sesame oil
1 lb steak or protein of your choice, cooked
3 cups rice, cooked (better if day or two old) – see my hack for drying out rice the day of
2-3 eggs, scrambled
½ onion, diced
1 bell pepper, diced
1 cup frozen peas and corn (1/2 cup each or 1 cup combined, again feel free to add or delete any veggies you prefer- other favorites we love: zucchini, broccoli, carrots)
SAUCE:
4 gloves garlic, minced
1 inch fresh ginger, diced
¼ cup soy sauce
1 tbsp sesame oil
1 tbsp sriracha (leave out if you do not want spice)
EXTRA:
1 tbsp butter
1-2 green onions, diced
Toasted sesame seeds
Directions:
1. Make your rice. Ideally, you will do this earlier in the week and have old rice in the fridge. The drier the rice, the better the stir fry. But if you forget, no worries. Simply make your rice. Spread hot rice out on a sheet pan and put in the fridge for a couple hours or blast in freezer for 20 min.
2. Chop your veggies. I like to use onion and bell peppers. Set aside in bowl.
3. Prep your ginger and garlic. Set aside.
4. Cook and prep your protein. For ease, we par-cook steaks earlier in the week to a medium-rare. Cut steak into cubes. You could start with it raw and cut into cubes or strips against the grain. (We also use rotisserie chicken often.)
5. Scramble your eggs in a bowl. Set aside.
6. Make sauce: combine garlic, ginger, soy sauce, and sesame oil
7. Heat a wok or large skillet over high heat. The hotter the better. Once hot, add sesame oil. (If working with raw steak or chicken, go ahead and add that now and cook until half way cooked through- seasoning with salt and pepper. Remove and go to next step. )
8. Saute onions and peppers until tender. Add frozen peas and corn. Add salt and pepper.
9. Add sauce and rice. Stir until well combined.
10. Make a well in the center of rice. Add butter. Let sit until rice is crackling. Pour scrambled egg into well and cook-- trying to not get too much of rice in the egg. You want a solid scramble
11. Once egg is scrambled, add cooked protein. Scrape the rice off the bottom and Stir well. Cook until meat is warmed or steak is medium.
12. Serve in bowls and top with green onion and toasted sesame seeds and sriracha.
