SPICY BLT CHICKEN SALAD
Makes approx. 4 servings:
(1-1.5 cups per serving)

INGREDIENTS:
2 cups diced chicken (I use rotisserie chicken without skin)
5-6 slices turkey bacon, chopped and sautéed until crispy
1 cup cherry tomatoes, chopped
3 stalks celery, diced
½ jalapeno, seeds removed and diced
2 tbsp mayonnaise
1/2 cup plain Greek yogurt (2%)
Salt and Pepper to taste.
1 tsp garlic powder
1 tbsp apple cider vinegar or red wine vinegar
1-2 tsp hot sauce
DIRECTIONS:
1. In a large mixing bowl, combine all ingredients above. I like to mxi with a fork, pressing the chicken against bowl to get a combined as possible. Taste and season accordingly.
2. Top with pickled red onions, more hot sauce and serve on a wrap or with crackers.
