S'mores Chia Pudding

S’MORES CHIA PUDDING:

Makes 3 servings :


Per Serving (1/3 of recipe):

INGREDIENTS:


1.5 cups light coconut milk   

2 tsp vanilla extract

2 scoops chocolate protein powder (I used Paleovalley which is already sweetened and quite possible the best protein powder- if not sweetened, add 2 tbsp maple syrup or 2 tbsp monkfruit sweetener)

6 tbsp chia seeds

½ cup Catalina crunch honey graham

½ cup mini marshmallows

¼ cup Lilys dark chocolate chips (you can leave these out to lower fat and just use some for topping)


Toppings (optional): mini marshmallow, chocolate chip, crushed graham cracker


DIRECTIONS:


1. In a small blender, combine milk, vanilla, protein powder, and chia seeds until lightly combined.

2. Let settle for 3-4 minutes. Pulse again. Add Catalina crunch, mini mallows, and chocolate chips. Shake or pulse on low.

3. Pour evenly into 3 tupperware. Let soak for 2-4 hours or overnight (preferred). When ready top with toppings of choice (must had to macros).
